Pivo z tanku
Prague tank beers, or to be more precise pivo z tanku, are every beer lover’s dream.
Tank beer is fresh beer sent straight from the brewery to the pub without pasteurization. Basically, a brewery truck, in which the beer is kept at the right temperature, stops in front of pub connects to the pub tank and fills it up. This means that there is no loss of flavor as the first time the beer has contact with oxygen is when it is being poured into the glass. Once the tank is opened, the bartender writes down the opening date to clearly show the freshness of the beer.
While there is definitely artistry in beer brewing, careful transport and serving beer is no less important nor less demanding. The Czechs often say that the bartender's job is almost as important as the brewer’s. A great bartender will pour the beer carefully with precision that is a result of a great amount of practice. This practice includes the correct angle of the glass, how much the tap is opened and what kind of glassware is the beer poured in. For the fresh pivo z tanku skillful pouring is essential, because it brings out the best that fresh beer has to offer. One of the most important aspects of fresh beer is the foam. Traditionally, there are four ways to pour the beer.
Hladinka is the usual pouring that consists of approximately one-quarter of foam, but there is also čochtan, with no foam at all. These pourings are rather well-known to drinkers all over the world. However, the two that are really special are Mlíko and ¦nyt. Mlíko consists almost entirely of foam (hence the name - milk). It is meant to be sipped all at once, "na ex". The Staropramen tank beer foam is silky, creamy and... words actually don't do it justice. It is one of those things that simply have to be tasted. ¦nyt, coming from the German word schnitt (cut), consists of half foam and half beer, which means that the silky foam is contrasted with the fine crispiness of the liquid. Traditionally, it is ordered by folks who want to avoid friendly teasing for getting a small glass of beer
.
Tank beer represents the art of brewing at its very best with all the flavors from the ingredients and the brewing process coming to life in a glass. It is beer served the way brewers envisioned it to be, as fresh as possible!
