PICANTE DE CUY – Cavia in pikante saus
Dit recept is ingestuurd door onze Peruaanse kokking Benita, die op het platteland woont en als geen ander weet hoe je cavia, guinea pig of cuy dus, zo lekker mogelijk bereid.
In Peru is cavia een lekkernij en het wordt opgediend met een pittige saus en rijst en aardappelen.
De cavia's in Peru zijn groter en worden flink vetgemest, en lijken dus eigenlijk niet echt meer op onze kleine knuffelige huisdieren.
INGREDIENTEN: voor 4 personen
1 cavia (guinea pig)
1 kilo aardappels
1 fijngehakte gele chilli (capsicum baccatum)
5 teentjes knoflook
zout naar smaak
¼ el olie
PREPARATION:
1. Soak the guinea pig in ground garlic and salt for around 4 hours before frying. Heat up the oil in a frying pan and put the whole guinea pig to fry (preferably over a low heat), Cover with a lid to prevent the oil from spitting. When the first side is a golden toasted colour, turn over the guinea pig so that the other side can cook and become golden.
2. At the same time, peel the potatoes and cut into halves, boil in salty water until fully cooked.
3. To prepare the chilli sauce, gently fry the chilli in some oil until the oil absorbs the juices and becomes a bright, lively (orange) colour.
4. Drain the boiled potatoes and mix the fried chilli.
5. Cut the guinea pig in quarters to serve, put the potatoes on the plate with the chilli mixed in and one quarter of a guinea pig on top.
